Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Can the developers of wrapper apps (Frost, Barinsta etc.) gather your account data?
Instagram will definitely limit your IP if it detects anything "fishy." For example, using inspect element to remove the login wall they place on their web interface gets you limited. If they suspect you are running a Bibliogram instance they will limit you.

Is there any secure foss client for Instagram & twitter or should i use web apps(If so how)
Barinsta if you need app client with or without account . Bibliogram for web apps or page but without account Twidere for twitter or any mastadon client if you want to use account but I suggest Fritter now its awesome no need of account just follow your twitter follows there and you get all feeds without account

Lil' off-topic, but since you mentioned Instagram's hoops - there's an open source project, Bibliogram.art, that is essentially a website you can use to view Instagram content while holding as much of Facebook's tracking back as possible, which also results in there being minimal required interaction.

Too much complaining here about Instagram. PixelFed is the solution I found
I'm not affiliated with the project, neither I consider it a panacea, but anyone who might be interested, here it is: https://pixelfed.org/ It's best to use the web browser with it, although there's an Android app for it (PixelDroid), and there is an official app for iOS and Android currently in beta.
