SPI. I did one with I2C but had to add pull up resistors. SPI was super easy. You can find the configuration in the SPI_XXX part here.

Has anyone managed to run a sofle choc with a rp2040?
Sounds like you are at least as knowledgeable as I on this stuff (not saying much;>). I use a Boardsource Blok in my klor, which is an rp2040. If it helps you can check out my repo

yup, here is my repo. There are STLs for Yubitsume and Saegewerk, though I have only tested the Yubi. The blender files are in there if you want to improve on my simplistic design; I don't have a great aesthetic eye.

zmk - ZMK Firmware Repository
KLOR - KLOR is 36-42 keys column-staggered split keyboard. It supports a per key RGB matrix, encoders, OLED displays, haptic feedback, audio, a Pixart Paw3204 trackball and four different layouts, through brake off parts.
TOTEM - TOTEM is a 38 keys column-staggered split keyboard. It meant to be used with a SEEED XIAO BLE or RP2040
