Getting into iidx
8 note lanes can be hard to read for anyone just starting out on IIDX. I would also suggest giving BMS, osu!mania 7k, or even DJMAX and EZ2ON 6k/8k a try at home to start the reading brain training.

any rhythm games intro? similar to o2jam, or IIDX but on mobile or PC?
I also second Beatoraja and Lunatic Rave 2. Beatoraja is more modern, but can be fucky to set up if you don't know exactly how Windows locale shit works. LR2 is old as fuck and pretty jank, but it's been the standard for over a decade for a reason! You need to get your own songs for them though, they don't come with any defaults. However, the scene for them is MASSIVE so you will literally never run out of songs for them once you do find them.

You would have to install multiple programs. First, install LR2(http://www.dream-pro.info/\~lavalse/LR2IR/search.cgi?mode=download) or Beatoraja(https://github.com/wcko87/beatoraja-english-guide/wiki). These programs are use d to actually play BMS.

Is there an emulator that runs Bemani games? (DDR/Beatmania/Pop'n Music)

I can't think about another video game using Java. I mean, there WILL be more but i haven't saw them.
To my knowledge, Beatorja is the one rhythm game that runs on Java. It’s probably the best way to simulate Beatmania IIDX on Mac right now.

Does anybody else have tons latency on Beatoraja?
I've tried it on Ubuntu-based distros, Arch-based distros, Fedora, I've tried different Java versions, I've tried moving the directory of Java and Beatoraja, it just doesn't work for me. Even following this guide to the very last letter, on an Arch install, with OpenJDK 8 installed through pacman, it just won't work for me. I even wrote MYSELF a guide on how to do it in the past, because it was such a pain in the ass to do on Ubuntu distros, and following my OWN GUIDE doesn't work.

rhythm game suggestions?
play taiko easiest way to play taiko on pc or mobile is the web simulator which im pretty sure adds songs everyday there are other simulators like tjaplayer3 but those are kinda hard to get setup and stuff and they're pretty janky imo another rhythm game that you can play is beatmania (i do not recommend this if you're pretty new to vertical scrollers as its pretty hard) the simulators for this one are lunatic crave 2 and beatoraja another recommendation is sdvx aka sound voltex simulators are kshootmania or usc (unamed sdvx clone) and my last one is clone hero remember guitar hero? that one rhythm game that everyone was playing well this one is a simulator for that and it lets you play guitar hero on your pc! if you need ways to get songs/beatmaps/charts for any of the simulators listed above you can either reply to this comment or just hmu in dms oh and theres this other game that i just want more people to know of and thats project outfox its kinda like osu as it has multiple game modes its still in development but i highly recommend you try it
