Yes you can! I do a lot of banking on GrapheneOS.

Even if your app isn't listed there, there's still a chance that it'll work. Mine isn't listed on that site, but it still works with no issues.

Sounds like GrapheneOS might be worth looking into. There you can use Play Services and Play Store in a much more privacy respecting sandboxed way. Many banking apps work fine. Check out https://privsec.dev/posts/android/banking-applications-compatibility-with-grapheneos/ for compatibility. If your banking app is not listed there, ask in the GrapheneOS Matrix channel or forum.
