Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

My best recommendation I could give you is to simply create things. Start small, for example create a small program in the field you're interested in and then go from there. You can check this for ideas on what to create. There's a lot of resources in there.

I give you one dataset https://github.com/softwaremill/lemon-dataset . It can be useful to spot lemons problem and can be a good proxy for the task discussed above. Then if you are looking on fine grained product classification there are open dataset also for this task.
