Dump your EEPROM, load it into Xbox Eeprom Editor on your PC, make the needed changes, put the EEPROM back on your console, write it to the console with Config Magic.

Download the file to your PC and use Ernegien's Xbox EEPROM Editor to disable the 1080i setting, save the file, upload it to your Xbox and use ConfigMagic to write it to the configuration EEPROM.

Make a backup of the current configuration EEPROM's content. Download it to your PC, edit the video mode settings with Ernegien's XBoxEepromEditor v1.0.0.1, save the updated eeprom.bin, upload it to your Xbox and load it into the configuration EEPROM with Config Magic v1.6.1-FINAL.

However, if you don't mind my asking, what is the source for this other eeprom that you have? Did you dump it from your own hardware or obtain it from somewhere online? I wonder if there isn't a conflict between the eeprom and that older HDD image? Have you tried looking it over with XboxEepromEditor?

Xemu's HDD Key, which you can fetch using XboxEepromEditor from your eeprom.bin file, usually located under %USERPROFILE%\AppData\Roaming\xemu\xemu.

If so, what you need to do is grab a copy of XboxEepromEditor from GitHub. Run that program and open your eeprom.bin, either in the default path, %USERPROFILE%\AppData\Roaming\xemu\xemu, or wherever you saved it.

If not, do you have a Raspberry Pi or Arduino so you can read then update the configuration EEPROMs content to change the language back to its original setting with Ernegien's XboxEepromEditor v1.0.0.0 available his github.com repository.
