Can Ledger connect to an ESP32, Arduino?
It definitely can, but some assembly will be needed. Typically you can look at how a low level client interacts with the Bitcoin application here https://github.com/LedgerHQ/app-bitcoin-new (check bitcoin_client for python, bitcoin_client_js for js, bitcoin_client_rs for rust) then do your own thing.

Nostr app
That's not planned internally but would be easy for a third party developer to do, since Nostr is only using Schnorr signatures which are already supported by the Bitcoin application (https://github.com/ledgerhq/app-bitcoin-new)

Why did the Nano X Bitcoin app dependent apps (such as Litecoin, Dogecoin, BCH) in version 2.1.0 go from 4kb each to 56kb each?

Exactly what is wrong with using a closed-source Ledger to keep your bitcoin
It's actually not closed source and even more funny you end up with less hard to check third party dependencies when you run the open source Bitcoin application (https://github.com/ledgerhq/app-bitcoin-new) on a Ledger device.

Accessing Ledger with JavaScript
You can check the APDU logs using the documentation of the (new) BTC application available at https://github.com/LedgerHQ/app-bitcoin-new/tree/develop/doc - first thing to check would likely be to make sure that you're using the newest version (2.x) of the BTC application since getWalletXpub wasn't present in the old one

With Christmas coming around and the bull market upon us, I thought it would be a good time to remind everyone one about the art of mnemonic memorization. The idea is you take a BIP39 seed, then make a poem, story, limerick, or song using the words to help you remember. If you gift bitcoin, you can include the writing with the seed-card you provide to help the recipient remember as well. If you want to play along, go to Ian's BIP39 page and generate a valid seed mnemonic then see if you can't create a blurb of text that includes all the words.
