Ambire AdEx is a decentralized advertising exchange based on Ethereum. The goal of the project is to simplify and reduce the cost of advertising thanks to blockchain technology, ensuring transparency and reliability of the process.

Does Stremio collect user data?
I was on a similar boat as you but from their site it seems that they pay the bills via advertising and it seems sensible to me. If you check their website, the FAQ states that they use ADEX, which I'm not really familiar with but from a glance they seem okay.

Yes! Currently, you can only run the software from https://github.com/adexnetwork/adex-validator and set it up with your own fork of the Platform.
