A question for other DMs that use TV tables.
The software I use for this is called Dungeon Board. It runs on Java, and it's completely free. It allows me to fog and unfog map images easily. The UI might be an issue, as it's more functional than decorative, you can look at the screenshots in the link and decide for yourself if it's too ugly for you..

Others have chimed in with valid application options to do this yourself. Another to consider is DungeonBoard. It just works, which is refreshing.
