I use cartube via trollstore, https://github.com/Avangelista/CarTube/releases.
Is YouTube specifically not allowed to be used on normal AndroidAuto interface even up to now in 2023? Or is it just in some countries? Why have they not just added a feature that disables all video apps when the car is in motion? Wouldn't that solve the safety issues and considerations?

Not yet. This only works for youtube, barely (https://github.com/Avangelista/CarTube/issues/4) Whilst carbridge works with any app, natively.
