Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Ublock rules. Can I use pihole instead?
pi-hole is a DNS based solution. TLDR: URL's/page's vs domain names, not the same thing. AdGuard solution in a browser can achieve this. Regex for domain names yes pi-hole can handle parts of this, but not page elements from a URL. The discourse page covers some of this and also I have on Github as have others. Hagezi blocklists are the current standard now: https://github.com/hagezi/dns-blocklists
You could go for one of the Lite blocklists for the network wide, family friendly (non-breaking) list.

You can create an Allowlist Request in Hagezi's Github. He usually pings the maintainers as well so that they can remove it too.

Are there blocklists that actually work?
As far as lists go, its extremely subjective. Definitely look into the Hagezi lists and yokoffing's configuration guide, I'd recommend Multi Pro++ for most people. Most other blocklists are redundant with that one.
