Parse pen strokes from .note file
My dad's project: https://github.com/nelinory/SupernoteSharp uses this approach to generate SGV files for each page or PDF files with vectorized content. Potrace is utilized for vectorization.

Unofficial MacOS app landed in AppStore
It's https://gitlab.com/manuscriptum/macos . But it's only the client itself, I haven't open source yet parsing library and few additional libraries, because they are a mess, I need to clean-up (or create stubs to enable other devs to do the job) and come up with a contribution documentation.

Update on open source projects
I have first beta release for MacOS https://gitlab.com/manuscriptum/macos. If you like you can download it from release page, or from google drive Nothing, except available time, prevent from release for Windows and Linux. I have a prototype for mobile as well, but it supports for now only Google Drive and local files and still requires additional testing.
