No app, no entry: How the digital world is failing the non tech-savvy
On a secure OS like e/OS or Graphene? Not many I'd wager. And you can use something like Insular[0] for extra piece of mind.
Besides, these shifty apps are not trying to root your phone, just to, in the worst case, send back data they should, or shouldn't even have access to.

ILPT Request: there’s an app called Fetch that lets you scan your receipts for rewards. Hypothetically, if one worked in customer service, such as a grocery store, could you take a bunch of receipts that customers didn’t want and scan them for yourself?

Disable Gmail work notifications after specific time
You could always move the apps (or clone them) to a work profile (like with island or it's FLOSS fork, Insular, or Shelter) and then just set a schedule to pause the work profile outside of work hours.
