So you'll need a IMAP and SMTP service (one monitors incoming mail the other sends mail). The most common (and best) is postfix and dovecot. Then you'll need to add openDKIM so that your mail doesn't get sent to the Gulag when a receiver is using gmail or Yahoo. You'll also want to install SpamAssasin to filter spam mail and maybe a database although I don't think this is really necessary. If you really want to set it up from scratch I have an automation script I created a while ago below (or just use a guide there's loads out there). But honestly I think the best thing for you to do is to use something like Mailcow which uses docker containers of all these services and sets it up automatically. Takes a lot of the stress out of it and TRUST ME setting up an email server is the most tedious thing I've ever done and it still shits the bed on a Monthly bases. My automation script is here https://github.com/CoogyEoin/SaorTech-cloud-services/blob/main/services/install_mail_server_with_ssl.sh
