I haven't used this one but it's relatively recent and there's an unofficial update as well that the updater seems invested in maintaining into 1.6.

Looking for a fishing solution.
I’m not entirely sure if this is what you’re looking for, and I haven’t tried it out myself: Fishing mod. From what I can see, it has a few difficulty modifiers that you can apply. So maybe you can just make the fish a bit harder to catch?

Fishing Mod: https://github.com/Zoryn4163/SMAPI-Mods/releases (The only fishing mod that I can find that let's you adjust fishing difficulty without mod compatibility issues. Make sure to turn off infinite tackles/bait unless you want that. Use FishDifficultyMultiplier to adjust difficulty.)

Any worth it non-Nexus mods?
The ones I'm familiar with are Zoryn's mods, and minervamaga/Eemie's mods.

Favorite mods
The only complex thing about it is you have to change the config.json file (install the mod, run the game, then close the game and the config.json will appear) to make it work however you want. Here is the page that talks about the options. If you just want easier fishing, you can make EasierFishing say true and if you want change the FishDifficultyMultiplier to be less than 1 to be even easier. If you would rather just automatically catch the fish and treasures, set InstantCatchFish and InstantCatchTreasure to true. Save the file after you make your changes and you'll be good to go!

That sounds like Junimo Deposit Anywhere (download). It's just a bit hard to find since it's not uploaded to the modding sites.
