Fabpot about the Symfony 6 and PHP: "I think we need to set the minimum version to 8.0. Supporting 7.4 does not make sense [as it] will reach OEM right after our release."
I think the "problem" here is not that much with hosting than PHP dependencies. It seems to me easier to change hosting than third party librairies in some cases. (Ex. PayumBundle)

Alternatives to akaunting
Other options I've found are Crater (Very similar to Akaunting). There hasn't been an update in a while, but the devs say they have a big one planned this month.

Self-hosted accounting software with SSO and/or LDAP support.
Crater looks like the closest one to Akaunting, but it still doesn't support SSO either. So the Projects app I have from Akaunting gives Akaunting the edge here for now. (Also it looks like it's trying to get into "crypto accounting", which is a red flag.)

Invoice ninja synology
By the way, have you tried Crater? (https://craterapp.com) It is perfect for billing & recording payments. Based on newer technology stack and very good UI. Lot less bugs than Invoice Ninja.
