MDT replacement - best tool for OSD?
The PowerShell Deployment (PSD) extension for MDT is a very good alternative (pun intended as I'm part of the team) and it can be used from anywhere as the SMB restriction has been contained only to the MDT console. The rest is happening via SSL and web services. BTW, regarding the ADK, you can still use the 2004 version that gives you the ability to install 32-bit Windows 10 and 64-bit Windows 10/11. Logs associated with updating a deployment share?
For days now I've been attempting to update a newly created PowerShell Deployment share (https://github.com/FriendsOfMDT/PSD) and it just won't update. I gets to the point of "copying .wim to deployment share" and just sits. I've let it sit for literally a day or so thinking maybe it just took a while. I've followed article after article for configuring deployment shares and have went through numerous videos (this also isn't the first I've used MDT so I kinda-sorta know my way around). I'm just not sure where else to turn to try to fix this issue. It'd be great to see an error message somewhere to at least jump start my googling.

Is there any alternative network boot to WDS?
For the MDT part now, there is a solution based on PowerShell that has shifted entirely to https instead of SMB (I'm part of the Development Team), you may want to take a look here https://github.com/FriendsOfMDT/PSD. Please read the documentation well before jumping the gun ;-).

MDT replacement - best tool for OSD?
We have MDT and SCCM from Microsoft and they aren't going anywhere anytime soon. I still use MDT to create and deploy images with Windows 10 and 11 as well as SCCM. ADK for Windows 11 21H1 still works perfectly fine for both OS's in MDT. You just have to take a couple extra steps for Windows 11 captures. Windows 11 isn't radically different from Windows 10, and it's "unsupported" because there's no active development in MDT. The community is kind of taking up that support with PSD. At the end of the day it still deploys the same. And you can work around any issues with a google search. Moving from MDT to SCCM/MECM?
The organisation I work for has been using MDT (Microsoft Deployment Toolkit) to deploy Windows 10 and our applications (Office, Adobe etc) to our PCs quite successfully for several years now. We had also been expecting to use it to deploy Windows 11 (we'd tested it with an earlier Windows 11 ADK and it seemed to work), but just today I came across this bombshell:
