My minecraft server struggling
Dont use ClearLagg, use https://github.com/Minebench/MobLimit instead of that. Whenver clearlagg needs to remove entities, it loads up all the chunks to delete entities, and then your server needs to work more to spawn entities again.

Whenever clearlagg needs to remove entities, it loads up all the chunks to delete the entities, then your server does more work to add new entities. Thus, there is no use of any entities-clearing plugins. In place of that, use a entities-limiting plugin. I use this with papermc and my server never faced tps loss because of entities : https://github.com/Minebench/MobLimit

How to make gradient in chat
This is the minimessage most likely. Here's the link for it. So far, ik that minimotd uses that. As of rn, I don't know what plugin does the formatting like that. But paper did update to use adventure instead. https://github.com/KyoriPowered/adventure-text-minimessage
