What are some of the best Material You apps available which looks different than standard Android/Material design UI
Consider taking a look at this list of MY apps. Lots of great implementations in there, my personal favorite probably being TachiJ2K which I use daily.

jlong/micCheck privacy
I was also using that app, as it has a nice UI as i learned from this list(featured on best MU apps on that list) and it mentions it as Nonfoss app (maybe before it used to be foss app). So, with a sad heart i left that app as i prefer foss apps more although it has the best UI. We normal people can't find out what can be tracked...

Try PocketPlan? It's not as feature-rich as the other projects, but it gets the job done.

I created an Open Source Do-Everything App
Im not sure when it will be available via F-Droid, if you want to find it in the playstore, search for "PocketPlan". I just added the binary to the github repo if you want to get it that way, but keep in mind you wont be able to receive updates that way, i would highly recommend just getting it via the playstore, as we have already pushed multiple updates to fix bugs etc.
