Thinking in change gentoo for kiss
It could theoretically be implemented; you'd just have to go through the packages in the main repo and for every configure-time option, add it to the build file with a default that matches what it would normally do with no intervention, but is altered by an environment variable set by the user. For an example, you can refer to what I did for the networkmanager build file in one of my repositories.

KISS is what you make it is. If you don't like the main repo, you can always switch to another main repo and have another entirely different system.
