How to replicate SpiralLinux snapshot + rollback in plain debian?
In Debian, I see that there is a custom installer "Spiral Linux" (https://spirallinux.github.io) with non-default settings that achieves the same kind of mechanism using "grub-btrfs" (https://github.com/Antynea/grub-btrfs) in combination with "snapper-rollback" (https://github.com/jrabinow/snapper-rollback) and a BTRFS subvolume layout suggested by the Arch wiki (https://wiki.archlinux.org/index.php/Snapper#Suggested_filesystem_layout).

grub-btrfs - Improves grub by adding "btrfs snapshots" to the grub menu. You can boot your system on a "snapshot" from the grub menu. Supports manual snapshots, snapper, TimeShift ... timeshift-autosnap-apt - * Timeshift auto-snapshot script which runs before any apt/apt-get update|install|remove using a DPkg::Pre-Invoke hook in APT.

Systemd-boot with btrfs snapshot boot?
Well.. The same way GRUB has grub-btrfs, rEFInd has refind-btrfs, which automates the whole process of booting your snapshots. Maybe you could give rEFInd a try. And honestly, I don't think that the GRUB issue will happen again. I'm using Linux for ages and it's the first time I saw it messing stuff up. Sorry if not answers your questions directly.

So why do so people still use GRUB?
Like GRUB has grub-btrfs to automate this process, refind has refind-btrfs. I never tested grub-btrfs, but refind-btrfs is awesome.

How would I list btrfs snapshots in the systemd-boot boot menu?

timeshift-autosnap-apt - Timeshift auto-snapshot script for Ubuntu and Debian based systems which creates snapshots of your system with timeshift before a package install, remove or upgrade using DPkg::Pre-Invoke hook in apt. Fork of timeshift-autosnap from AUR.

snapper_systemd_boot - The aim of this tool is to automatically create boot entries for systemd-boot from snapshots created by snapper.
