The number of mentions indicates the total number of mentions that we've tracked plus the number of user suggested alternatives.

Edit the level.dat file with an NBT editor (I recommend using NBTStudio) or if you are running a Bukkit server, try using Essentials or a similar plugin.

cant copy a chunk from one NBT file to another (notice how the copy button is greyed out)
i don't think nbt explorer can copy/paste multiple tags at once. you could try nbt studio instead

Mabye you can modify the world files (specifically the level.dat) using an NBT Editor to turn it back into an achievement gainable world.

Universal Minecraft Editor is just an NBT editor, If your looking to create custom trades I would check what the underlying structure of the NBT is in 1.18 and then use an up to date editor like this one. You can also summon in custom villagers in game wich might be preferable than trying to use a NBT editor unless you want to batch procces villagers or have villagers spawn in with custom trades.
