Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

I'm having trouble uploading fights to FF Logs.
Does ACT show you any information while fighting? if you don't see any numbers odds are you aren't launching it before logging into your character. A couple months ago the game updated in such a way that ACT no longer works if it isn't running before logging in. I don't know if that also means you can't turn off and then on again the live logging. You can read more about it over the github page (update from March 7 explains the issue, later updates attempt other ways to make it work as it used to).

if I uninstall gshade using the uninstaller I'm safe now right? At the moment I don't want to download reshade I just want gshade completely off my computer
No, there's a third party launcher that has a plugin API, popularly used by the Dalamud plugin
