Powershell Logging ?
Another logging module EZLog (available too on the PSGallery of course). Often, I use it with the example 3 syntax (cause I'm lazy). The log file is structured like a .csv file, then it's easy to use the log file in a later use. Only one cmdlet for a colorized display in the shell and a an output in a log file.

Execute a program while also writing any output into a file but also displaying it in the console.
Have you consider using the EZLog PS Module ? Only one cmdlet to use, easy to use (cf. the name og this module), display in console .... whith colors AND in a log file, and a log file built as a .csv file (for a easy later use).

Better for u/wolfe_ow use the PS EZLog module (see the Example 3 in the github page to have probably the best and easiest efficient way to use it).
