Trustable builds is a topic I've thought too much about. I helped build Plogon, which builds every single main repository Dalamud plugin. You can trust (main repository) Dalamud plugins to not contain malware, because every plugin is built from its codebase using a lot of GitHub Actions. This is one of the reasons I believe open source is important - you just can't do that with closed source applications.
