There's a Discord community and GIT repository called "A Series of Dice Based Events" that has full or partial conversions for all the 1E APs. Here's the Crimson Throne one.

3rd party adventures ?
That said, if you don't want to do that, I think Rise of the Runelords or Curse of the Crimson Throne are your best bet. Those are 1e APs (extremely popular ones!), but completed community conversions are available of both of those to 2e (linked above). There is also a completed community conversion of Skulls and Shackles - the "you're a pirate" AP, but that doesn't seem to fit the bill that you're looking for.

Where are you guys getting the templates for these things?
If you're savvy and want to do longer, more complex stuff there's also https://github.com/serialhex/PF2e-TeX, but it's much more complicated and probably unnecessary for most use-cases.
