For MacOS, Boxer (http://boxerapp.com/) is great. It creates executables (distributable with zero dependencies) that include dosbox and the app to run - the creation is super easy too. Dosbox footprint is very small. It’s just amazing to double click and start the app or game without having to worry about setting up dosbox.

You can play the DOS version of Fallout 1 using DOSBox. I recommend Boxer which makes things much easier.

There's great retro console games you probably missed out. You might want to learn how to use an multi-emulator like Ares however I must warn you in advance, emulation is a legal gray zone, and a licencing hell.
