Running Laravel in a subdirectory (Tricky Nginx config)
You can also go about this by setting up the app as it's own server block, then proxying to that for the path within the main server. Example here. That way you can manage all the Laravel app stuff in its own server block, which can simplify config a little by not needing to nest so deep.

Stuck on Bookstack installation
We have install scripts provided from the docs for fresh versions of Ubuntu LTS releases. If on a non-fresh machine, You could instead open and follow the installation script as a guide as I keep it commented for this purpose. I recently created a video of using the install script, I may soon look to create a similar one to run through the manual install steps.

What's an open source Evernote alternative with an app for Windows, iOS, and Android?

You might be better off raising this as an issue on their GitHub repo, I've recently had to make changes to the install scripts we provide, due to composer throwing a warning.

Yunohost: How to install bookstack?
"sudo -u USERNAME yunohost app install https://github.com/YunoHost-Apps/bookstack_ynh" - that's what I typed in. Maybe it isn't the right syntax. I've looked sudo -h and from there I can't see a mistake in syntax
