Secure Boot on ESP32 Platforms
Secure boot is a restriction put on a device, indeed. Whether secure boot should be enabled on a device or not depends on the perspective, and also on the threat model. For example, for an ESP32-based crypto wallet product like Jade (https://github.com/Blockstream/Jade) that's to be used to store Bitcoin, it's very likely a very good idea to enable secure boot, no matter it's an official or DIY device.

Don`t trust, verify the seed generation of the jade HW
Having purchased the Jade HW, I want to be sure that the seed phrase it generates is safe. So I went to the repository https://github.com/Blockstream/Jade and tried to find the piece of code used to generate it. I could not find it.

For me Blockstream Jade has a DIY guide and the TTGO Lilygo T-Display is open source despite being made in china. blockstream jade are not trying to peddle an over priced piece of hardware, the DYI shows that they are not trying to profit from you with hardware.

Not your keys not your coins
I'm a major believer in securing coins with a hardware wallet, but I feel foolish for trusting one that is closed source. Luckily, I didn't lose anything, but I'm moving my coins to an open source wallet. I'm leaning toward the Blockstream Jade because it's open source with published verifiable code (here), it can be run airgapped, and it has the option to run "stateless" which means the device doesn't even save your seed.
