Lock Mac when walking away
I’ve used BLEUnlock before, worked really well. Uses Bluetooth low energy to figure out the proximity of your phone and locks based on that.

I'm not the author of the following macOS app, but I share my findings here just in case you didn't know yet a such useful app: BLEUnlock on GitHub for simplifying our hackintoshes' life with not natively fully supported cards (who says Intel...)... (here the reason for this post in this section!)

I wish we could also have an option to "Lock Mac" like with our iPhone to prevent someone from unlocking it and using it.
This app has some cool options for Bluetooth devices, incl watch and phone.

Something like this?. Looks like that might work if the Oura periodically sends out a static MAC address. Haven't tested it though. Sounds cool.

Hardening macOS
Here's a somewhat dated example of such a setup: https://github.com/memco/dotfiles. Basically, you just need the install.sh if all you care about is macOS preferences, but you can also add in something like the brewfile so that you can also install your apps. My brewfile leverages MAS so that I can install stuff from the app store in addition to what's available via brew. I haven't automated app preferences, but macOS and apps are just a clone, `./install.sh && brew bundle --file Brewfile` away.
