Does anyone know if there's a theme close to this shade/simplicity?
If so, then you could probably disable global-font-lock-mode and then just set the foreground and background colors for the default font face. To figure out the specific colors used in the screenshot you shared you can probably find a utility for your OS that will allow you to do that. E.g. on macOS there’s this: https://github.com/sindresorhus/System-Color-Picker
