I absolutely ADORE AM2R. This game is fantastic
Drag and drop simply doesn't scale to a game of AM2R's caliber. If you'd like to see more of this "no programming no engine game..." https://gitlab.com/yellowafterlife/AM2Rrc

Are there any AM2R-based fangames in development?
I believe you are seeking free use versus open source. The Community Updates are not free use for a few reasons, primarily because AM2R's code isn't really fit for other applications and that the original source release was licensed under similar language (see AM2Rrc).

FOSS/Open source Metroidvania
I don't know of any full ones, but this is a basic starter that I was working on: https://github.com/Cauldrath/PracticeMetroidvania

I almost gave up this platforming challenge I made in Shards of Gravity
It was just a practice project, but this: https://github.com/Cauldrath/PracticeMetroidvania
