Picotron Is a Fantasy Workstation
As much as I love Lua its very difficult to shoe-horn into an 8-bit CPU, especially with limited RAM... but there are other efforts to bring more modern languages to these platforms, and one that strikes me as interesting is dflat, from 6502Nerd:

BBC Basic returns on multiple platforms, open sourced
One of the books was an entire annotated disassembly of the BASIC interpreter, if memory serves. I vaguely remember there being some sort of kerfuffle about that.
Another thing that one got: a printed circuit diagram of the machine.

Alas, the NTSC version doesn't actually work on NTSC consoles. The NMI timings have been changed to work with some (but not all) emulators in NTSC mode, but it isn't a full NTSC conversion, it's an NTSC emulation (at least, that's what the authors call it in that version's scroll text).
