I don't understand how is your data related to a software update, nor how is a screen replacement related to wifi and mobile data... Moving on, if you want to transfer your files with smart switch, you would need a USB-C to USB-C cable and connect the 2 phones together, then on the new one open smart switch and select to receive data and then follow the instructions. If you want to update your phone from your laptop, also use smart switch on your computer and follow the instructions from there, it will ask you the phone model and some other stuff. Alternatively, if you won’t use shaders or resource packs, Simply Optimized is essentially a “lite version of fabulously optimized without all the QOL mods like connected textures or the shaders mod (I’d recommend adding zoomify for the optifine zoom). Honestly, there's not enough information there for me to give you a good answer. Likely your configs for AppleSkin and Epic Fight are bad because you upgraded or downgraded those mods. Try deleting their configs from your .minecraft/configs folder. (see this issue on github)
