EEPROM not available
Perhaps an SPI serial EEPROM chip like this one, interfaced with a 8522 VIA chip would be a better choice if really all you need is a way to read and store data, as opposed to some kind of sticky memory that is part of the memory address space. This would be a great extension to Ben's SPI video. There is also this cool SD card project from u/gfoot360

Questions about the 6502 computer
Oh nice, I already had that and https://github.com/gfoot/sdcard6502 open as my next steps. My plan was to add a second VIA, connect the display from there in 4 bit mode to one port and a modified version of that keyboard (similar to ben version that is just a shift register and a buffer) on the other port and handle it myself
