how/can? to see mods code
If you want to see mod's source code, then first step is to find it on CurseForge. Let say, you want to see Origins source code. You open https://www.curseforge.com/minecraft/mc-mods/origins and then you look for the "source" link, which looks like this on this screenshot: https://i.imgur.com/0TSkqWM.png This link will send you to project's source code on Github: https://github.com/apace100/origins-fabric If you finished your Java course you should recognize folders structure of the project. There are also some requirements from Fabric mod loader, you should know them from fabric wiki. Not every mod has the source code publicly available, you have to accept the fact that not every modder want to share his work with community, but you can learn from those who are sharing code.

Anyone knows about plugins similar to The Origins mod?
Sorry, I was busy so it didn't really click. As far this mod specifically goes, no, you need to install a client-sided mod as the mod adds required UI elements the client. I don't know of any similar server-sided plugins off the top of my head, but if you or your friends know Java you can make one. The source code is public here for reference.
