I like https://github.com/calcom/cal.com. It might not be as neat as some demo "production" repos. But that's why I like it. It shows an actual real world production Next.js app.
One that comes to mind, is the website for Radix UI: https://github.com/radix-ui/website
Today I learned that Tailwind's website is also an open source Next.js app! https://github.com/tailwindlabs/tailwindcss.com
You should look for best practices on Github.com, there you will surely find good examples. Not only on their official Vercel profile but also from amateur and professional users. The second way is YouTube. In each video description, you should also find a link to the project's Github repository.
