from a privacy point of view GUI wallet designers decided all new transactions will use a new address, but in reality you can reuse any address as much as you want. about the different addresses, with the same seed phrase you can generate as much wallets as you want. if you use a GUI like ledger, bitcoin gui or whatever, the GUI is smart enough to manage all your address as 1 account to make your life easier, some more advance GUI wallet will allow you to manipulate each wallet independently. in the example you gave sending 1.5 you basically can do it in many ways based on the wallet you are using.
