To introduce yourself to what is possible within the game, I think it's good to look at a very extensive mod that changes a lot of things. My favorite mod to study for ideas is DeCiv. It's an extensive and well-made mod done by people intimately familiar with the mechanics of UnCiv. Your first few mods will be nowhere near as ambitious as DeCiv, but that's okay, we're just using it for ideas for now. Another good one to study is the Civ 5 Expansion Mod.
Now, if you're looking to just mod up a single nation, that's easy enough to do. Allow me to refer you to a mod of my own: The North Pole. This is a modest little mod, so it's easy enough to imitate when making your first one. It doesn't change the game rules or feel, and it doesn't give any new buildings or resources or whatnot; it just adds a new nation to play around with, and I think it's a good example of what a simple new nation mod can do.
