I do not know if Mac is worse in this regard, but my own bottleneck seem to be with disk i/o, and enabling VirtioFS on M1 seem to solve the problem only to create another, discussed here: https://github.com/docker/for-mac/issues/6243
As another alternative I would like to mention Colima as a lightweight Docker installation. I used it only on Mac so far and was quite happy about it. Maybe I worth a try: https://github.com/abiosoft/colima
Quite solid in my Late 2012 Mini. My only issue with Docker on Mac is this 6 year old problem https://github.com/docker/roadmap/issues/157. I tried all other alternatives podman, colima etc. with similar results for some reason. (I kinda was lazy to understand the bunch of security concepts like SE Linux labels etc., so partly gave up putting more effort to learn). Only thing that resolved was vctl (VMWare's) but that thing is absolute bare bones compared to any of the others.
