I've had the same struggles as you and the only proper alternative I could find that is not tied to a for-profit organization was Bromite. It is a hardened fork of Chromium stripping off all of the Google stuff and adding a lot of security and privacy patches. So you can forget about syncing your bookmarks.
Features I like in Bromite: You can enable it to force desktop sites at all times and have some ad- and tracker-blocking using the lists from this repo. It's actually better than Samsung Internet for the Tab S7+ since the forced desktop mode is enabled at all times and is also enabled when you add websites to the home screen such as YouTube or Reddit. Not to forget: since Chromium 102, you can have a sticky dark mode, meaning you force dark mode onto websites and except certain websites of your choice from that dark mode. It's actually waaay better than what you would find in Dark Reader.
