I think you don't really have any control over it. Converting via rebels can be very annoying for large nations. The best thing you can do is probably to conquer more hindu lands. Once Hindu is the dominant religion in your country (that is, the religion that holds the most development), you can accept rebel demands and convert your state religion. Contrary to what many people seem to believe, it is NOT necessary for Hindu to have more than 50% of your country's development, just more than any other religion. You can upload your save file here to check how much dev every religion has. Unfortunately, the ingame chart for religions in the ledger is useless, since it shows the number of provinces, which is not relevant.
