I would take a look at Syncthing before going with Nextcloud and see if it works for your use case. I used to host Nextcloud, and it used to be great. However, over time it seemed to get slower and more buggy as new versions just kept adding more new features while neglecting the performance of the core product. I started looking for alternatives and realized that I really don't have a use case for a cloud storage like platform as I wasn't sharing files via link or anything like that, I just needed some folders to sync between devices, so I switched to Syncthing. With Syncthing, all your devices will have a full copy of the folders that you sync with it, so you will have multiple copies of the data. You can also set up file versioning for any or all of the folders on any device.
I store on google drive but I use cryptomator to encrypt everything before syncing (this way google cannot see your files).
