There is no evidence that Chinese phones report data once you remove their weird ROM. Many people find that ROMs are equally as easy to install as most other mods. On LineageOS, each device has a detailed recipe that I would trust most people to run over a debloat script. If this interests you, you may consider browsing LineageOS Devices until you find a phone you like. Then, put LineageOS for microG on the device.
