I used to run a self-hosted Bookstack instance but I wanted a single pane of glass for all of my notes and to have them be more portable than just access through a web browser. YMMV of course depending on your needs.

I switched to using Obsidian Notes. It's basically a markdown editor that sites on top of a folder/file structure. An example of this hierarchy in the app looks like this. I like it because of the completely customizable hotkeys and the speed of the searching index. If you are like me you lose track of a note after weeks of not needing to reference it. Obsidian offers backlinks, tags, keyword searching, and others to sort through notes you might have forgotten about. One of the cool features it has is this linking chart, in this screenshot, it's sorting the note's relationships by my custom tags.
