How to properly convert video in H.264 (8 bit) to H.265 (10 bit)?

I was told H.265 10 bit is a better format in terms of file size and quality. My goal is to convert a MP4 in H.264 8bit to MKV in H.265 10bit. So I wanted to give it a try. At first glance I couldn't find any 10 bit option in Shutter Encoder (it should have been in advance features), but then I found this: https://github.com/paulpacifico/shutter-encoder/issues/6
