I didnt mean that NixOS support Gentoo's USE flags but that it could acheive similar results, I showed you an exemple about overriding the CFLAGS variable globally ( for all programs that is compiled with gcc ). There are also package specific flags you can set (compiling without kde support for example), but those arent "global", you need to set them for each package by hand. USE flags will set patches and variables for a group of package automatically for you, this could also be done in NixOS but there is no official standard. This is actually a very discussed issue, but before standardization take place you will have to do it by hand, which is arguably worse than gentoo.
