I've been using this tool: https://baldursextendedworld.com/Install-Tool/ - You can just pick and choose what you want, it'll help you find dependencies and conflicts, and it'll merge your BG1 and BG2 into a single trilogy. It'll also help you identify the recommended (green) options, and the ones which may make your game buggy (red). There's a few other mods I'd recommend for your second play through, but I don't want to mention them now (spoilers!). For your first run, you can pick up the NPCs and quests if you're interested. The kits are really fun, the shaman fix is a must-have if you're going that route, and I highly recommend the cleric/druid spell fixes + domains. It's not required, but it's fun.
