Everything works well, but I would like to move to a larger 1TB NVMe drive, so I figured this would be a good opportunity to transition to OpenCore. I followed the Dortania guide to create a USB installer for Big Sur. When I boot from the USB Installer, I am greeted with the OpenCore menu to choose where to boot, but the USB Big Sur installer does not appear in the list. If I boot from my NVMe drive with Clover, the USB Big Sur installer does show as an option. I used the config.plist from here: https://github.com/wouterds/hackintosh since his setup is pretty close to mine.
