Can someone explain to me how the colour yellow works? I was trying to make a colour palette using math because that's just how I function but it clearly isn't working out.

For a start, I'd suggest using a color model that attempts to represent human perception of color. If you're using HSV or HSL to create swatches, try LCH or HSLuv instead. There's a section on Wikipedia on the disadvantages of HSL and HSV that explains why they're not suitable to making shades with math.
